আজকের রেসিপিতে দেখে নেব ক্যাপসিক্যামের আচার তৈরির পদ্ধতিটি। আসুন দেখে নেওয়া যাক, এটি বানাতে ঠিক কি কি উপকরণ লাগছে-
উপকরণ-
ক্যাপসিকাম পাঁচটি, দুই টেপিল চামচ সরষের তেল, অল্প পরিমাণে মেথি, আধা চা চামচ লেবুর রস, লঙ্কার গুঁড়ো ১ চা চামচ, হলুদের গুঁড়ো আধা চা চামচ ও নুন পরিমাণমতো।
প্রণালী-
প্রথমে ক্যাপসিকামগুলো ভালো করে ধুয়ে নিতে হবে। এরপর বীচগুলি ফেলে দিতে হবে। এরপর প্যানে সরষের তেল গরম করে নিয়ে ও মেথি দিয়ে ভালো করে ভাজতে হবে। এরপর হলুদের গুঁড়ো ও লঙ্কার গুঁড়ো দিতে হবে। তারপর কিছুক্ষণ ধরে নাড়াচাড়া করার পর নুন ও ক্যাপসিকামের টুকরা দিয়ে ঢাকা দিতে হবে মিশ্রণটিকে। কিছুক্ষণ বাদে নরম হয়ে গেলে এর মধ্যে লেবুর রস ঢেলে ভালোভাবে নাড়তে থাকুন। তারপর কিছুক্ষণ বাদে নামিয়ে দিয়ে রেখে দিন শিশিতে।
