উপকরণ-
কাঁচা আম একটি, চিনি ২ চামচ, সরষের তেল ১ চা চামচ, ফোড়ন ১ চামচ, কালো সরষে অল্প, নুন স্বাদমতো, গরম জল ৪ কাপ।

প্রথমে লম্বা করে কাঁচা আমগুলো কেটে নিতে হবে। এরপর সব পাতলা করে কাটুন। এরপর কড়াইতে সরষের তেল ঢেলে সর্ষে ফোড়ন দিন। কয়েক মিনিট পর আমের টুকরোগুলো দিয়ে দিন কড়াইতে। এরপর ভালো করে নাড়তে থাকুন। তারপর এক চিমটে নুন দিন। এরপর চার কাপ জল ঢেলে দিন। এরপর ভালো করে ফুটিয়ে নিতে হবে।
আমগুলো ভালোভাবে সেদ্ধ হয়ে এলে দুই চামচ চিনি দিয়ে দিন। এরপর স্বাদ অনুযায়ী নুন মিশিয়ে নিয়ে আরও কিছুক্ষন ফুটিয়ে নিন। এরপর ইচ্ছা হলে এক চিমটে হলুদ দিতে পারেন। ব্যাস, তৈরি আপনার কাঁচা আমের অম্বল।
